Lentils are an underrated nutritional powerhouse. These little plant based legumes provide large amounts of fiber, iron, and one of the more complete proteins you can find in a plant source. However, if you’re anything like us you may find it difficult to get lentils into your daily routine (they aren’t really the most appetizing little guys).

Enter lentil pasta.

Barilla makes a fantastic lentil pasta with only one ingredient: red lentil flour! Now, don’t think that because the pasta is made with lentils that it is a low carb and low calorie food. Truth is, it still has about the same amount of carbs and calories as regular pasta but because it has so much fiber it has a far lower glycemic index which fits it into what we call “smart carbs.”

Directions for this pasta are simple.

What you’ll need.

1 pound shrimp

Cajun blackening seasoning (we get it from Aldi)

One onion

2 TBSP minced garlic (or more if you love garlic)

One box of Barilla lentil pasta noodles (we found them at Meijer)

3 cups baby spinach

3 Cups Chopped Mushrooms (whichever type you prefer)

Chopped Cherry tomatoes

1/4 White Wine

Juice from one lemon

Bring pasta to a boil and drain it as you would any normal pasta noodles

Lightly heat 2-3 TBSP olive oil in frying pan

Saute onions and garlic until fragrant.

Saute shrimp with garlic and onions

when shrimp are fully cooked add in mushrooms and cook until soft

Add tomatoes and spinach last and cook only 2-3 minutes all together

Pour wine and lemon juice into pan and add noodles and combine together

Serve!
