Delicious Gluten Free Banana Bread Recipe
Before we get into the nuts and bolts of this recipe, let's have a quick chat about some these natural desserts and treats. Every now and again we will make something like this to keep around the house for the occasional sweet tooth satisfaction. However, this is not something we will keep in our refrigerator year round.
Despite the fact that this recipe is gluten free, relatively low carb, relatively low glycemic, and made with real food ingredients; it is not necessarily a healthy low calorie snack. In our workshops and writings we often talk about the major culprit in the standard American diet being the over abundance of calories. Society loves to demonize carbs, fat, and protein as the individual culprits, but the reality is that the major contributor to health issues are calories, and this is not a low calorie food.
With all that said, we are not robots who exist on lean meat and vegetables alone. We do enjoy having things like this around the house from time to time. Despite their high calories, these treats made with real food ingredients do offer a few advantages. 1) There will be less of an excursion in blood sugar due to the somewhat low glycemic index. 2) The natural ingredients may produce less inflammation in the endothelial linings of the digestive tract. 3) Despite the representation in the media, avoiding gluten does provide some benefit and decrease gastric symptoms for many people who are not allergic to gluten.
To summarize, while recipes like this offer an alternative to standard sweet breads made with flour and gluten, don't fall into the trap of thinking that because something is natural and organic that it is a health snack to have around all the time.
now, on to the recipe:
3 medium over ripe bananas
1 tbls vanilla
1/4 cup melted coconut oil
(Optional - 1/3 cup monk fruit)
Mix / blend
Add 1 3/4 cups blanched almond flour
1/2 cup tapioca flour or gluten free flour
1 tsp baking soda 1/2 tsp sea salt
Stir or blend until thoroughly mixed
Use parchment paper to line a bread pan
Place dough in pan (Optional - top with dark chocolate/ nuts)
Bake at 350 for 60 minutes
