Sweet Potato, Chard, Sirloin Stir Fry



Sometimes the best impromptu recipes come from finding some random items in the fridge and garden. Last night's dinner was no exception.


The key to this simple recipe is not cooking at a very high temperature, but rather setting the stove a little lower and letting it cook at a slower rate.


The combination of sweet potato and chard gives a potent blend of vitamin A and vitamin C and the sirloin can be a very lean protein added to increase satiety.


In a large stir fry pan add:

2 tbl olive oil

1 large onion chopped

2 tbl minced garlic

1 large sweet potatoes cubed

1 tsp parsley

1 tsp oregano

1-2 tsp sea salt

1 tbl coconut aminos

Cover and cook on medium heat until potatoes are soft.


Add:

1 lb grass-fed sirloin tips

(Marinaded w coffee bbq rub, olive oil, coconut aminos, garlic and salt - 6-12hrs)

Cook beef 4-8 minutes

Then add 1 cup of chopped rainbow chard

Cover for 30 seconds to 1 minute until soft
